Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, whisk together the pumpkin puree, milk, oil, and egg.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the pan for a few minutes before removing them to a wire rack to cool completely.

Tips:

  • For extra flavor, add 1/2 teaspoon of vanilla extract to the wet ingredients.
  • You can also add 1/2 cup of chocolate chips, nuts, or dried fruit to the batter.
  • To make sure the muffins are cooked through, insert a toothpick into the center of a muffin. If the toothpick comes out clean, the muffins are done.

This recipe is easy enough for kids to help with, and the muffins are a delicious and fun fall treat. Enjoy!
